The restaurant design is a visual delight featuring works commissioned by Chef Miyakawa from some of Japan’s most famous artisans. Guests are greeted by a wooden “Edo Komon” screen crafted by Nobuo Tanihata, regarded as a living legend for his mastery of the “Kumiko” style woodworking technique developed 1300 years ago. Chef Miyakawa has trained the team of master chefs in his culinary style, showcasing the best of traditional Edomae sushi while incorporating ingredients from his native Hokkaido. The innovative menu that earned Miyakawa three-Michelin stars allows guests to experience unique, seasonal sushi and tsumami dishes (appetizers) packed with umami, their delicate flavors extracted precisely from each ingredient.
